The First Salad

My Honey and I enjoyed our first salad from the garden last week. The forecast called for nighttime lows in the mid-30s and I got nervous for the plants’ survival. I rigged up some extra covers on the trellis to protect the tomatoes and threw some clear plastic cups on the tiny pepper plants. Guess what – they lived!

I expected it to be a little bitter, considering the contents: arugula, baby kale (Lacinato and Red Russian), and French Breakfast radish tops moderated by only a few leaves of Bib and Grand Rapids lettuce.

However it turned out to be deliciously tender and even a little sweet, topped with a couple cilantro sprouts and slices of the eight radishes I pulled.

It was fun to enjoy a harvest from our own backyard, and a surprise that it tasted even better than expected!

Vinaigrette:
Apple cider vinegar, honey, olive oil, crushed dried herbs, kosher salt, freshly ground black pepper
